Abstract

La presente invención se refiere a extractos de uva muscadine que tienen propiedades antioxidantes. Los extractos son una mezcla de extractos de uvas muscadine bronceadas y púrpuras que inesperadamente incrementan la solubilidad del ácido elágico en la mezcla. Los extractos con solvente se obtienen en algunos ejemplos al extraer con agua los residuos pulposos de las uvas de las cuales se ha removido sustancialmente el jugo. Los incrementos sorprendentes adicionales en la solubilidad de ácido elágico también se pueden obtener al adicionar una fuente adicional de antocianinas al extracto, por ejemplo, al incluir en la composición un extracto de uvas muscadine púrpura completas de las cuales no se han removido cantidades sustanciales del jugo. Otras fuentes adicionales de antocianinas incluyen arándanos, zarzamoras y frambuesas; la fuente adicional de antocianinas se pueden obtener de una corriente residual de procesamiento de frutas para incrementar la eficiencia del proceso de producción.
