Abstract
La presente invención se refiere a un proceso para recuperar betaína de una materia prima que consiste esencialmente en melaza, que comprende: i. una etapa de desmineralización, donde la cantidad total de sales en la melaza llega a un nivel inferior al 2% en peso (en materia seca total); ii. Una etapa de conversión, donde la melaza se somete a la acción de una enzima formadora de fructano, para formar una melaza que contiene fructano (fructano-melaza); iii. Una etapa de separación donde la fructano-melaza se somete a una separación cromatográfica, con lo que se obtiene una fracción que contiene betaína, en donde la relación de betaína respecto a otros constituyentes de la materia seca se incrementa a por lo menos 90:10, por lo cual la etapa (i) se ejecuta antes de la etapa (iii) y por lo cual la etapa (i) puede ejecutarse antes, durante o con posterioridad a la etapa (ii), en donde en la etapa de separación (iii) se utiliza un sistema de resina de intercambio iónico de ácido fuerte que consiste de resinas, por lo cual entre 20 y 95% son resinas en forma de sodio o potasio, y entre 5 y 80 % son resinas en forma de calcio.
