Abstract
resumo processo para a recuperação de betaína de uma matéria-prima que consiste essencialmente em melaço; produto de melaço de beterraba sacarina convertido; e uso do produto de melaço de beterraba sacarina convertido a invenção refere-se a um processo para a recuperação de betaína a partir de uma matéria-prima que consiste essencialmente em melaço, que compreende: i. uma etapa de desmineralização, na qual a quantidade total de sais no melaço é reduzida a um nível abaixo de 2% em peso (em matéria seca total); ii. uma etapa de conversão, na qual o melaço é submetido à ação de uma enzima formadora de frutano para formar um melaço contendo frutano (melaço com frutano); iii. uma etapa de separação, na qual o melaço com frutano é submetido a uma separação cromatográfica, obtendo-se assim uma fração contendo betaína, em que a etapa (i) é executada antes da etapa (iii) e em que a etapa (i) pode ser executada antes, durante ou subsequente à etapa (ii). a matéria-prima pode conter alternativamente ou consistir essencialmente em suco espesso.
