Abstract

La presente invención se refiere a barras de cacao y métodos para su fabricación. Las barras son formadas mediante la provisión de una masa que incluye, en una base seca, al menos 30% en peso del polvo de cacao, teniendo la masa un contenido de humedad de al menos 10% hasta aproximadamente 52% en peso. La masa es procesada en barras que tienen un contenido de humedad no mayor de aproximadamente 15% en peso. Las barras pueden ser crocantes o masticables y pueden ser utilizadas como un ingrediente tal como una inclusión o un remate para productos alimenticios con el fin de incrementar los niveles de antioxidante y los métodos de creación de las barras dan como resultado pérdida mínima de la capacidad antioxidante como resultado del procesamiento.
