Abstract
La presente invención se refiere a un aditivo de calcio seco para usarse en un producto de pan fermentado que comprende una mezcla íntima de: (1) polvo de carbonato de calcio que tiene un diámetro de partícula medio menos que aproximadamente 30 µm, y (2) un ácido orgánico que es sólido a temperatura ambiente; en donde la mezcla intima está en una forma seca; en donde la relación en peso de carbonato de calcio a ácido orgánico es de aproximadamente 10: 1 a aproximadamente 75:1, y en donde el aditivo es sustancialmente libre de sales de calcio del ácido orgánico.
