Abstract

La invención se refiere a un proceso para la preparación de un jarabe de alulosa que contiene alulosa en una concentración del producto de más del 70% en peso, con respecto al peso total del jarabe de alulosa, tal proceso comprende las etapas de (a) proporcionar una solución acuosa que contiene alulosa en una concentración del educto de como máximo 70% en peso, con respecto al peso total de la solución; y (b) evaporar agua a una temperatura de la solución inferior a 60°C y a presión reducida aumentando así la concentración de alulosa en la solución acuosa que comienza a partir de la concentración del educto hasta alcanzar la concentración del producto.
