Abstract
La presente invención se refiere a un polipéptido variante que tiene actividad lipasa, en donde el polipéptido puede ser un polipéptido que tiene una secuencia de aminoácidos que tiene al menos un 70% de identidad con una secuencia de aminoácidos madura de SEQ ID NO: 1 o SEQ ID NO: 6, en donde el polipéptido comprende una sustitución de aminoácido en la posición 295 y al menos una sustitución de aminoácido adicional en la posición 113, 121, 179 y/o 284, donde las posiciones se definen con referencia a SEQ ID NO: 1 o SEQ ID NO: 6. La invención se refiere además a un proceso para preparar una masa en donde se usa un polipéptido como se describe en este documento y se prepara un producto horneado a partir de la masa.
