Abstract

La presente invención describe mutaciones en los genes que codifican sintasas de almidón y, además, en las enzimas de ramificación de almidón asociadas con niveles mejorados de fibra dietética y almidón resistente en el endospermo de una variedad adecuada de arroz. La fibra dietética y el almidón resistente se mejoran hasta un punto para reducir significativamente los valores del índice de hidrólisis de los granos de arroz al 35 %-40 %. Estas variedades de arroz tienen una gran demanda por la población diabética y proporcionan una serie de otros beneficios para la salud, como la reducción del aumento de peso corporal, la salud cardíaca, y la salud del colon. Como esta estrategia no implica el uso de tecnologías de manipulación genética, puede emplearse directamente por los programadores de mejoramiento de arroz sin ninguna restricción.
