Abstract
La presente invención se refiere a un método para mejorar el perfil de sabor de un glicósido de terpeno glucosilado (GTG) que comprende: a) mezclar un cereal malteado con un glicósido de terpeno glucosilados en agua para formar una mezcla de cereal de GTG en donde el cereal comprende una amilasa; b) ajustar la temperatura de la mezcla a una temperatura suficiente para activar la amilasa y por un tiempo suficiente para formar una mezcla que comprende glicósidos de steviol glicosilados en donde el número promedio de unidades de glucosa del GTG en la mezcla de cereal de GTG se reduce.
