Abstract

Se describe un proceso para mejorar las velocidades de producción/producción de productos de pared celular de levadura y extractos de levadura añadiendo saponina o un ingrediente que contiene saponina a cultivos de levadura durante fermentación o a la crema de levadura antes de la autolisis. En el contexto de una instalación de procesamiento de remolacha azucarera, la saponina, que está contenida dentro de las corrientes del proceso de refinación del azúcar durante la producción de sacarosa, está fácilmente disponible y puede introducir eh cultivos de levadura o crema de levadura ya sea como extracto de saponina o como hojas de remolacha azucarera secas y trituradas, sin requerir ningún recurso o costos de adquisición adicionales. La actividad entre la saponina y la crema de levadura/levadura da como resultado la formación de productos de fermentación de saponina.
