Abstract
La presente invención se refiere a un proceso para tratar un mosto en una caldera, donde dicho método comprende los pasos de: (a) proporcionar: una caldera (1) provista de una entrada (1u) adecuada para suministrar un mosto al interior de la caldera y de una salida (1d) adecuada para que fluya el mosto fuera de la caldera, unos medios de calentamiento (2) adecuados para llevar el mosto, contenido en la caldera, cerca de la temperatura de ebullición o hasta dicha temperatura, así como también para controlar dicha temperatura, un sistema de inyección de gas adecuado para inyectar un gas inerte en dicho mosto, (b) suministrar el mosto de un paso de filtrado a dicha caldera de cocción a través de la entrada, estando dicho mosto a una temperatura por debajo de su temperatura de ebullición; (c) mientras se inyecta un gas inerte a través del mosto, se calienta dicho mosto hasta una temperatura de tratamiento, Ta, y se mantiene a dicha temperatura que es menor que la temperatura de ebullición, Tb, del mosto durante un período, ttrat, comprendido entre 15 y 90 min y no más de lo necesario para evaporar como mucho un 4% en peso de agua presente inicialmente en el mosto; (d) transferir el mosto tratado a un paso de separación del sedimento a través de la salida.
