Abstract

La presente se refiere a un proceso para el tratamiento de un mosto en una caldera, en donde dicho método comprende las etapas de: (a) proveer: una caldera (1) provista con una entrada (1u) apta para alimentar el mosto en la caldera y con una salida (1d) apta para hacer fluir el mosto fuera de la caldera, medios de calefacción (2) apta para llevar al mosto contenido en la caldera próximo, o a la temperatura de hervido, así como también para controlar dicha temperatura, un sistema de burbujeo de gas apto para hacer burbujear un gas inerte dentro de dicho mosto; (b) alimentar el mosto desde la etapa de clarificación en dicha caldera de hervido a través de la entrada, dicho mosto se encuentra a una temperatura debajo de su temperatura de hervido; (c) mientras se burbujea un gas inerte a través del mosto, calentar dicho mosto hasta, y mantenerlo a una temperatura de tratamiento, Tₐ, la cual resulta menor que la temperatura de hervido, Tᵇ, del mosto por un tiempo de duración, tₜʳₐₜ, comprendido entre 15 y 90 min., y no mayor que el requerido para evaporar a lo sumo 4% en peso de agua inicialmente presente en el mosto; y (d) transferir el mosto tratado hacia una etapa de separación de turbios a través de la salida.
