Abstract

La presente invención está relacionada con la industria lechera en general y con la industria del tratamiento de la leche para obtener leche deslactosada y valoración del subproducto en particular, y todavía más particularmente con la industria de tratamiento de leche por medio de diferentes medios de separación de los componentes tale como los equipo de micro y nano filtración. La función de la invención es la de permitir una leche deslactosada o sin lactosa con un perfil sensorial equivalente al de una leche pasteurizada normal sin deslactosar, utilizando los pasos esenciales de separación para disminuir los costos de producción, aún otro objetivo, fue el de determinar el efecto en las características organolépticas de la concentración de los componentes naturales de la leche y las concentraciones que logran el primer objetivo planteado, todavía otro objetivo es el de determinar la proporción entre retentado y permeado para obtener un perfil sensorial equivalente al de una leche pasteurizada normal sin deslactosar.
