Abstract
La presente invención proporciona un proceso para preparar un almidón inhibido que comprende, en orden: a) extraer almidón a partir de una fuente natural y refinar parciamente para proporcionar un almidón parcialmente refinado teniendo un contenido de proteína residual en una base seca de almidón de más de 0.4% en peso y menos de 8.0% en peso; b) tratar dicho almidón parcialmente refinado con un agente blanqueador para proporcionar un almidón inhibido; y c) recuperar dicho almidón inhibido.
