Abstract
La invención se relaciona con un pirofosfato disódico (SAPP) modificado con una reacción retrasada, con la producción de este, y con el uso del mismo como un ácido de fermentación para producir artículos horneados. El propósito de la invención es el proporcionar un pirofosfato disódico (SAPP) modificado con una velocidad de reacción (ROR) retrasada para la masa, que comprende la menor cantidad posible de aluminio. Esto se logra por medio de un método para producir pirofosfato disódico (SAPP) modificado, en donde a) se provee ácido fosfórico acuoso, el ácido fosfórico contiene compuestos de magnesio, calcio, potasio y/o aluminio disueltos en una cantidad que corresponde a 20 a 5000 ppm de magnesio, 0 a 5000 ppm de calcio, 0 a 5000 ppm de potasio, 0 a 400 ppm de aluminio con respecto al producto de pirofosfato disódico, la cantidad total de magnesio más calcio más potasio más aluminio es al menos 300 ppm, b) se agita en una solución acuosa de hidróxido de sodio o carbonato de sodio, y c) se deshidrata la solución obtenida a una temperatura en el intervalo desde 190 a 250°C con un contenido de ortofosfato, medido como P2O5, de < 5.0% en peso.
