Abstract
Agglomerated sodium acid pyrophosphate suitable for a leavening agent in self-rising flours and baking powders is prepared by moistening finely-divided sodium acid pyrophosphate with from 6 to 15 per cent of an aqueous medium or a solution of an alkaline earth salt, such as calcium lactate, chloride, glycerophosphate, monocalcium phosphate or magnesium lactate, sulphate or chloride, and agitating the moistened pyrophosphate to form agglomerates. These are dried at a temperature between 60 DEG and 110 DEG C., after preliminary screening. A wetting agent such as sodium alkyl sulphates or sulphonates, alkylated aromatic sulphonates or alkali metal salts of fatty acids may be added to the moistening liquid from between 0.05 and 2 per cent by weight to assist the agglomeration and to precipitate disintegration on contact with water. U.S.A. Specifications 1,834,747 and 1,951,328 are referred to.ALSO:Agglomerated sodium acid pyrophosphate for use in self-rising flours, baking powders and as a leavening agent is prepared by moistening the finely ground pyrophosphate with water or an alkaline earth salt solution to form agglomerates which are then screened and dried, the product retaining the moisture resisting properties of coarsely ground pyrophosphate as well as the superior baking and leavening qualities of the finely ground pyrophosphate. From 0.05-2 per cent by weight of a wetting agent; e.g., sodium lauryl sulphate, may be added to the moistening liquid to assist agglomeration and to facilitate disintegration on contact with water or batter mixes. According to examples, the pyrophosphate is incorporated with sodium bicarbonate and flour to obtain a self-rising flour, and with sodium bicarbonate to obtain a baking powder. U.S.A.
