Abstract

Un método para producir un producto de confitería semi-terminado, tal como chocolate o similar, utilizando al menos una unidad centrífuga (2) (3) (4) para moler y mezclar simultáneamente al menos algunos de los ingredientes del producto semi-terminado, y que incluye una cámara de procesamiento alargada (12) con un eje sustancialmente horizontal (7), al menos una entrada (A) para los ingredientes que van a ser procesados y una salida (B) para los ingredientes procesados, y un husillo energizado (15) ajustado dentro de la cámara de procesamiento, coaxialmente con el eje y ajustado con una sucesión de apéndices radiales (18) acomodados entre la entrada y la salida; el método incluye los pasos de cargar al menos un primer ingrediente del producto semi-terminado a través de la entrada; moler el primer ingrediente dentro de la unidad de molienda y mezclado mediante la rotación del husillo a una primera velocidad; cargar al menos un segundo ingrediente a través de la entrada, después de la molienda; rotar el husillo a una segunda velocidad para moler y mezclar los ingredientes a fin de formar una mezcla del mismo tamaño de grano que el producto semi-terminado; cargar al menos un tercer ingrediente a través de la entrada; mezclar el tercer ingrediente con la mezcla previamente molida para formar una mezcla adicional; llevar la mezcla adicional a una temperatura determinada para obtener el producto semi-terminado; y transferir el producto semi-terminado a una estación de almacenamiento y empaque.
