Abstract

La presente revelación proporciona microorganismos transformados con una molécula de ácido nucleico para reducir la represión catabólica por nitrógeno del transporte/degradación de la asparagina y/o sobreexpresar genes que codifican proteínas extracelulares o de pared celular involucradas en la degradación de la asparagina y/o genes que codifican proteínas involucradas en el transporte de asparagina en condiciones preparación/procesamiento de alimentos. También se proporcionan métodos y usos de los microorganismos y productos alimenticios preparados con dichos microorganismos.
