Abstract
La presente invención está relacionada con una nueva composición proteica que comprende fuentes de origen animal como vegetal que presentan un valor de calidad nutricional PDCAAS elevado con un aporte de aminoácidos esenciales mayores a los de las proteínas de huevo entero así como un aporte de aminoácidos esenciales cercanos o mejores a los de la carne de origen bovino, la cual se emplea en aplicaciones de pastas, snacks extruidos, galletas y productos cárnicos.
