Abstract
Se propone un procedimiento para cristalizar, mediante enfriamiento en forma progresiva, en etapas múltiples dispuestas en serie en un recipiente de cristalización (10) un flujo continuo descendente de una solución de sacarosa saturada a una temperatura desde aproximadamente 78° hasta aproximadamente 120°C, cada etapa manteniendo la solución de sacarosa que está siendo cristalizada a una temperatura previamente determinada, hasta alcanzar una temperatura desde aproximadamente 25 hasta aproximadamente 40°C, obteniendo cristales de sacarosa substancialmente pura; una suspensión que contiene base de azúcar, se introduce en el equipo de cristalización, en la primera etapa, en forma conjunta con la solución de sacarosa saturada de 1.05-1.15; En otra modalidad de la presente invención, la solución saturada es alimentada y su temperatura es controlada, ya en la primera etapa del recipiente (10), para obtener una supersaturación de entre 1.05 y 1.15, induciendo la formación de los cristales pequeños utilizados como los cristales de base.
