Abstract

La invención se refiere a composiciones de goma gellan de alto desempeño que tienen una fuerza de gel en Curdmeter al 1% de al menos aproximadamente 117 g/cm2, es decir, desde aproximadamente 117 g/cm2 a aproximadamente 400 g/cm2. Las gomas gellan de alto desempeño tienen un bajo contenido de acilo pero un peso molecular incrementado. Una modalidad de la invención también se refiere a procesos para producir gomas gellan de alto desempeño que tienen una alta claridad. La invención se refiere adicionalmente a productos industriales alimenticios y no alimenticios que comprenden gomas gellan de alto desempeño.
