Abstract

La presente invención se refiere a un procedimiento para hacer una bebida que contiene jugo de naranja con calidad de anaquel estable, caracterizada porque se añaden componentes de sabor y aroma en forma de aceite y esencia a una fuente de concentrado producida por un metodo de evaporación, manteniendose dichos componentes de sabor y aroma sustancialmente invariables a traves del procedimiento y al menos durante los pasos de esterilización y llenado, a fin de obtrener un producto terminado con un nivel de aceite de naranja titulable menor que 0.015 por ciento y una proporción de la cantidad combinada de acetaldehido, butirato de etilo, 3-hidroxihexanoato de etilo y valenceno, a la cantidad combinada de alfa-pineno, mirceno, linalol, 4-terpineol, alfa-terpineol y notcatono de al menos 1.2 a 1.
