Abstract
La presente invención se refiere a un material duro de triglicérido confeccionado estable, en fase cristalina beta-primaria, caracterizado porque comprende de 45 a 98 por ciento de triglicéridos de 2-estearoildipalmitina (PSP) de 2 por ciento de triglicéridos de 1-palmitoildistearina (PSS); menos de 7 por ciento de triglicéridos de tripalmitina (PPP); menos de 7 por ciento de triglicéridos de triestearina (SSS) menos de 3 por ciento de diglicéridos, menos de 10 por ciento totales de PPP y SSS; y menos de 10 por ciento de los ácidos grasos de los glicéridos que se están insaturando, ácido p-palmítico y ácids S-estéarico. Un procedimiento para hacer un material duro de triglicéridos confeccionado, estable en la fase cristalina beta-primaria caracterizado por los pasos que comprenden a) fraccionar un aceite de suministro que contiene concentracione elevadas de ácido graso insaturado de 2-C18, triglicéridos de 1,3-dipalmitoilo (PUP) y altas concentraciones de ácido graso insaturado 2-C18, triglicéridos de 3-palmitoilo (PUU), con lo cuqal los triglicéridos trisaturados indeseables, los triglicéridos insaturados y los diglicéridos en el aceite de suministro se separa de los triglicéridos PUP y b) hidrogenar la fracción de triglicéridos de PUP y triglicéridos PUU, con lo cual se forma un material duro de triglicéridos confeccionando, estable, en la fase cristalina beta-primaria.
