Abstract
La presente invención se refiere a un método para proporcionar propiedades funcionales de grasas o carbohidratos en un producto alimenticio, caracterizado porque comprende añadir al producto alimenticio un agente de voluminosidad soluble en agua que se selecciona del grupo que consiste de una hemi celulosa A, una hemi celulosa B, una hemi celulosa A modificada, una hemi celulosa B modificada o mezclas de las mismas, como una reposición para el total o una porción de la grasa o carbohidrato. Una composición caracterizada porque comprende: a) un edulcorante de gran proteína y b) un agente de voluminosidad soluble en agua que se selecciona del grupo que consiste de: i) una hemi celulosa A; ii) una hemi celulosa B; iii) una hemi celulosa A modificada; iv) una hemi celulosa B modificada, y v) mezclas de (i), (ii), (iii), y (iv).
