Abstract
na presente invención se refiere a método para eliminar grasa de un producto de carne molida, cocido generalmente plano y formado, mientras que se mantiene su integridad estructural y textura, que comprende las etapas de: a) llevar el producto a una temperatura en la cual una porción de la grasa contenida en la carne se licúa; b) comprimir el producto, mientras que la grasa permanece licuada, aplicando una presión de rodillo que recorre repetidamente el producto en un plano paralelo al producto, por un periódo a un nivel de presión suficiente para exudar cuando menos 33 por ciento en peso de la grasa en el producto, mientras que se mantiene la forma, estructura y calidades comestibles y c) retirar la grasa líqudia conforme se exdude la masa, Aparato para eliminar grasa de un producto de carne molida formado, que comprende: un soporte para sostener el productoy configurado para promover el flujo de grasa que sale del producto; y compresores para el producto contra el soporte, los compresores comprenden una pluralidad de rodillos montados para aplicar una presión de rodamiento que recorre repetidamente el producto en un plano paralelo al soporte por un soporte por un periódo y a un nivel de presión suficiente para exudar una porción substancial de grasa licuada del producto.
