Abstract

The invention relates to the food industry, namely to a process for the production of dried pumpkin and a process for the preparation of dishes with the use thereof.The process, according to the invention, includes the preliminary preparation, cutting of pumpkin into small pieces, application of a 2...3% suspension of corn starch with a temperature of 75...80°C, placement of pumpkin pieces on the drying surface, blowing thereof with hot air by maintaining the temperature inside the pieces of 50...60°C up to the attainment of humidity of 6...14%, cooling, sorting and packaging of dried pumpkin in an atmosphere of inert gas.The process for the preparation of dishes with the use of dried pumpkin includes the rehydration of pumpkin in water at a ratio of 1:(3...4.5), respectively, and subsequent thermal treatment.
