Invenţia se referă la industria cărnii, şi anume la un procedeu de afumare la rece a produselor din carne.Procedeul solicitat include afumarea produselor din carne prin recircularea fumului obţinut la mocnirea învelişurilor tari de nuci maturizate cu dimensiunea particulelor de 0,5…1,0 mm, în condiţiile pseudolichefierii lor cu accesul limitat de oxigen timp de 18…24 ore, precum şi maturarea şi uscarea produselor obţinute la o temperatură de 10…12°C timp de 3…5 zile.
