Abstract

Inventia se refera la industria carnii, si anume la un procedeu de afumare la rece a produselor dincarne. Procedeul solicitat include afumarea produselor din carne prin recircularea fumului obtinut la mocnirea invelisurilor tari de nuci maturizate cu dimensiunea particulelor de 0,5…1,0 mm, in conditiile pseudolichefierii lor cu accesul limitat deoxigen timp de 18…24 ore, precum si maturarea si uscarea produselor obtinute la o temperatura de 10…12°C timp de 3…5 zile.
