Abstract
The invention relates to the meat industry, namely to a process for cold smoking of meat foods.The claimed process includes smoking of meat foods by recirculation of the smoke, obtained during smouldering nutshell with the particle dimension of 0,5…1,0 mm, in conditions of fluidization with oxygen limited access during 18…24 hours, as well as maturation and drying of the obtained foods at a temperature of 10…12°C during 3…5 days.
