Abstract

Inventia se refera la industria laptelui si poatefi utilizata la fabricarea produselor lactoacide,si anume a chefirului, bifiluxului si iaurtului. Procedeul de fabricare a produselor lactoacide cu valoare biologica sporita include normalizarea laptelui dupa continutul de grasimi, omogenizarea lui, pasteurizarea, racirea, incorporarea maielei, omogenizarea amestecului, fermentarea si racirea lui, maturarea, omogenizarea repetata, ambalarea si racirea produsului finit.Noutatea inventiei consta in normalizarea laptelui dupa continutul de grasimi pana la 0,05...3,20%, in care se introduc 0,4...0,6 l/t de ulei iodat de floarea-soarelui dublu rafinat si dezodorizat cu un continut de iod de 0,5 mg/ml.
