Abstract
Procedeul se referă la industria alimentară, şi anume la un procedeu de obţinere a alcoolului etilic.Rezultatul tehnic este utilizarea rămăşiţelor viti-vinicole.Procedeul prevede acidularea melasei cu acid sulfuric sau clorhidric, diluarea ei cu apă, introducerea substanţelor nutritive, levurilor, rediluarea melasei, fermentarea amestecului obţinut, distilarea şi rectificarea lui.Noutatea constă în acidularea melasei până la pH 2,8-3,4, diluarea şi rediluarea cu deşeuri viti-vinicole aşa ca levuri-rămăşiţe şi /sau borhot divin şi /sau suc de difuzie din boştină, iar fermentarea amestecului se produce cu levuri autolizate la o doză de 2,0-4,0% vol. Levurile autolizate viti-vinicole fiind preparate din levuri-rămăşiţe de la producerea vinului de masă amestecate cu deşeuri viti-vinicole şi /sau melasă la o proporţie de 1:2.
