Abstract

The invention relates to the food industry, namely to a process for the production of crisp bread-rings.The process, according to the invention, includes cleaning of wheat grains from extraneous impurities, washing, soaking thereof into water up to the humidity of 48...51%, dispersion thereof up to a homogeneous mass, preparation of the table salt solution and, optionally, granulated sugar, kneading of dough from dispersed wheat grains and, optionally, wheat flour of highest quality, table salt solution and, optionally, granulated sugar, pressed baker's yeast and vegetable oil, rest of dough during 15...20 min, cutting thereof in portions of 1.5...2.0 kg, cutting of each portion being repeated 3...4 times with a rest pause of 10...15 min, rolling up of dough portions into rolls, rest during 15 min, preshaping of the dough half-finished products, fermentation thereof during 40...50 min at the temperature of 35...40°C and relative humidity of 75…85%, placement of dough half-finished products into the oven, scalding thereof during 2...5 min at the temperature of 98...100°C, drying upon displacement from the scalding zone into the baking zone by air blow-off, baking at the temperature of 200...230°C during 10...20 min, cooling, prepacking and packing of finished crisp bread-rings.
