Abstract

Invenţia se referă la industria vinicolă, şi anume la un procedeu de fabricare a vinului roşu sec din struguri cu un conţinut scăzut de compuşi fenolici.Procedeul, conform invenţiei, prevede zdrobirea şi desciorchinarea strugurilor cu obţinerea mustuielii, macerarea-fermentarea acesteia cu căciulă plutitoare, eliminarea seminţelor sedimentate în primele 3...5 zile de la formarea căciulii, adăugarea în mustuială, la a 6-a zi de la formarea căciulii, a seminţelor de struguri de soiuri cu bob negru tratate termic, în proporţie de 25…50% din cantitatea seminţelor rămase, după care se efectuează macerarea-fermentarea mustuielii în decurs de 8…12 zile, totodată seminţele de struguri sunt tratate la temperatura de 40…45°C în decurs de 3…4 zile.
