Abstract

본 발명은 충치 억제 물질을 함유하는 케첩에 관한 것으로, 본 발명에 따라 감미료로서 이소말토올리고당, 스테비오사이드, 및 자일리톨 또는 말치톨을 사용하여 제조된 케첩은 기존의 설탕 및 맥아엿을 사용하여 제조된 케첩과 유사한 감미를가지면서 섭취후 구강내에서 산생성 및 글루칸 생성이 억제되어 충치 유발을 방지할 수 있다.

Claims (3)

  1. 전체 중량의 9 내지 15%의 이소말토올리고당, 0.01 내지 0.05%의 스테비오사이드 및 3 내지 7%의 자일리톨 또는 자일리톨의 1내지 1.5배량의 말치톨을 포함하는 케첩.
  2. 제1항에 있어서, 36 내지 40%의 토마토페이스트, 9 내지 15%의 이소말토올리고당, 7 내지 9%의 식초, 3 내지 7%의 자일리톨, 2 내지 4%의 정제염, 0.01 내지 0.05%의 잔탄검, 0.01 내지 0.06%의 향신료 및 0.01 내지 0.05%의 스테비오사이드를 포함하는 케첩.
  3. 제1항에 있어서, 36 내지 40%의 토마토페이스트, 9 내지 15%의 이소말토올리고당, 7 내지 9%의 식초, 3.75 내지 8.75%의 말치톨, 2 내지 4%의 정제염, 0.01 내지 0.05%의 잔탄검, 0.01 내지 0.06%의 향신료 및 0.01 내지 0.05%의 스테비오사이드를 포함하는 케첩.
