제1도는 크리임상, 관능 특성들을 가진 저지방 또는 실질적으로 지방이 없는 식품의 제조에 이용될 수 있는 미소망상조직 미결정성 셀룰로오스 수성분산액의 제조를 위한 연속 교반 탱크 반응기 형의 다중 패스(multiple pass)연속법의 특정 구체예를 예시한 개략도이다.
제2도는 크리임상, 관능 특성들을 가진 저지방 또는 실질적으로 지방이 없는 식품 제조에 이용될 수 있는 미소망상조직 미결정성 셀룰로오스 수성분산액의 제조를 위한 불연속적인 일련의 다중 패스법의 특정 구체예를 예시한 간략도이다.
제3도는 제1도 및 제2도에 예시된 것과 같은 미소망상조직 기구의 원형 과압 가공 밸브의 횡단면도이다.

Claims (5)
- 최소한 12,000psi의 압력강하를 가진 고전단구역내에서 약 3-10중량%의 미결정성 셀룰로우스 및 약 90-97중량%의 물로 구성된 수성분산액을 가열 및, 반복 전단시켜서 미결정성 셀롤로우스를 처미세 크기의 미결정성 셀룰로우스 단편들로 단편화하고, 고전단 조건하에서 결정성 셀룰로우스 단편들을 재집괴시켜 최소한 약 25부피%의 기공물, 약 5-20마이크론 범위의 평균입자 크기, 및 최소한 약 75중량%의 입자들이 약 25마이크론미만의 최대치수를 가질 정도의 입자크기 분포를 가진 다공성 미소망상조직 미결정성 입자들의 수성분산액을 생성시키고, 상기 미소망상조직 미결정성 셀룰로우스 분산액을, 상기 미소망상조직 미결정성 셀룰로우스의 건조중량을 기준으로, 약 2-33중량% 크산탄 검과 합하여, 크산탄 안정화 미소망상조직 미결정성 셀룰로우스 분산액을 제공하고, 및 상기 크산탄 안정화 미소망상조직 미결정선 분산액과 부가적인 식품 성분들을 블렌딩하여, 약 0.25-4중량% 분산원 미소망상조직 미결정성 셀룰로우스, 약 50-99중량%의 물, 약 1-35중량%의 탄수화물들, 약 0-10중량%의 단백질, 및 약 7중량%미만의 드리글리세라이드들로 구성되는 저지방 또는 지방이 없는 식품을 제공하는 단계들로 구성된, 저지방 또는 실질적으로 지방이 없는 식품 제조방법.
