Claims (6)
- 치즈를 생성하기 위해 미리 처리된 우유를 먼저 밀크에서 분리된 유장을 통해 농축하고 다음 농축된 우유를 응고시키는데 필요한 혼합물 및 치즈 생성에 필요한 다른 임의의 혼합물을 첨가 및 혼합하는 관형 통로구조를 가진 치즈를 생성하고 이를 분배하는 방법에 있어서, 우유를 최종치즈의 DM내용물에 상응하는 건조물질 내용물(DM내용물)에 농축시키고 첨가물의 하나로서 우유에서 발생하는 유산박테리아의 작용하에서 이산화탄소가스(CO2가스)를 형성할수 있는 화학물질을 선택하고 농축우유의 혼합물과 첨가제를 분배전 포장지에 채워 포장하고 이를 통하여 우유의 응고 및 형성을 모두 포장지에서 발생하게 하여 CO2에 의해 형성된 응고우유의 구멍은 최종치즈의 관형통로 구조를 형성하는 것을 특징으로 하는 관형통로구조를 가진 치즈를 생성 및 분배를 준비하는 방법.
- 제1항에 있어서, 유산박테리아를 생성하는 CO2가 화학물질과 함께 또는 동시에 우유에 첨가되는 것을 특징으로 하는 관형 통로구조를 가진 치즈를 생성 및 분배를 준비하는 방법.
- 제1항 또는 제2항에 있어서, 화학물질은 구연산으로 구성되어 있는 것을 특징으로 하는 관형 통로구조를 가진 치즈를 생성 및 분배를 준비하는 방법.
- 제3항에 있어서, 구연산은 치즈에서 중합하여 발생한 물질의 캡슐에 첨가되어 함유되는 겻을 특징으로 하는 관형 통로구조를 가진 치즈를 생성 및 분배를 준비하는 방법.
- 제4항에 있어서, 캡슐된 물질은 버터지방 또는 리브좀, 바람직하기로는 리보존을 구성하는 것을 특징으로 하는 관형 통로구조를 가진 치즈를 생성 및 분배를 준비하는 방법.
- 제1항 또는 제2항에 있어서, 유산박테리아는 Sc 디어시티랙택스(diace tylactis)와 L 크리모리스(cremorise)간에서 선택되는 것을 특징으로 하는 관형통로구조를 가진 치즈를 생성 및 분배를 준비하는 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
