Claims (6)
- 가공치즈 제조성분물에 치즈, 지방, 가공염, 물과 유화제, 결합제, 농후제, 응유, 유단백질과 방향제등과 같은 통상적인 첨가제가 일정량 포함되고 가공염은 총중량에 1. 5 내지 3%로 트리쇼듐 시트레이트 또는 쇼듐 포스페이트가 이용되며, 복합성분물에는 시트르산 잔기와 식용지방산 잔기의 사카로스 에스테르 또는 2개의 식용지방산 잔기를 총중량에 0. 1 내지 2%가 포함되는 것을 특징으로 하는 가공 치즈 성분물.
- 제1항에 있어서, 에스테르가 총중량에 대히 1. 0 내지 2% 포함되는 것을 특징으로 하는 가공 치즈 성분물.
- 제1항 또는 2항에 있어서, 에스테르가 8 내지 20개 탄소원자를 포함하는 식용 포화 또는 불포화 지방산의 사카로스 모노 또는 디에스테르가 되거나 하나 또는 두개이상의 식용지방산 잔기와 하나의 시트르산 잔기를 포함하는 글리세롤 에스테르가 되는 것을 특징으로 하는 가공 치즈 성분물.
- 제1항, 2항 또는 3항에 있어서, 가공지방산에 12 내지 18개의 탄소 원자가 포함되는 것을 특징으로 하는 가공 치즈 성분물.
- 제1항에 있어서, 별명의 상세한 설명에서 기술한 바와 같고 실시예에서 예를 든것과 같은 것을 특징으로 하는 가공 치즈 성분물.
- 가공치즈 생산에 있어서, 시트르산 도는 식용 지방산 잔기가 있는 글리세롤 에스테르 또는 사카로스 에스테르의 용도.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
