Claims (20)
- 전분의 비분해단말로부터 1, 4-알파-D-글루코시드 결합을 분열시킬 수 있으나 전분의 1, 6-알파-D-글루코시드 결합을 분열시킬 수 없는 엑소효소에 의하여 열화된 70중량% 이하의 히드로포브기 또는 히드로필기와 히드로포브기 양자를 함유하는 전분유도체로 이루어지는 저장중의 오일링 및 겔링에 대한 안정성 및 저항성이 개선된 에멀젼의 유화특성을 가지는 개질전분.
- 제1항에 있어서, 상기 전분은 약 60이하의 WF로 산 또는 열변환되거나 알파-아밀라제에 의하여 변환된 개질전분.
- 제1항에 있어서, 상기 엑소효소는 베타-아밀라제이고, 상기 전분은 왁스 메이즈 전분이고, 상기 전분은 교질화되고, 전분건조 중량기준으로 0.25% 이상의 옥테닐숙신산 무수물로 처리하여 유도된 개질전분.
- 제3항에 있어서, 상기 전분은 히드록시프로필기를 포함하도록 더욱 유도된 개질전분.
- 제1항에 있어서, 상기 히드로포브기를 함유하는 전분유도체는 교질화되고, 상기 히드로포브기는 탄소원자수 5이상의 알킬, 알케닐, 아랄킬 또는 아랄케닐기로 이루어지는 개질전분.
- 제1항에 있어서, 상기 히드로필기와 히드로포브기 양자를 함유하는 전분유도체는 교질화되고, 다음식을 가지는 치환기를 함유하는 개질전분.식중 R은 디메틸렌 및 트리메틸렌기의 클라스로부터의 기이고, R′는 탄소원자수 5이상의 알킬, 알케닐, 아랄킬 또는 아랄케닐기로 이루어지는 히드로포브기이고, 카르복실기 COOH는 히드로필기이다.
- (a) 각 치환기가 히드로포브기 또는 히드로필기와 히드로포브기 양자를 함유하는 교질화된 전분유도체를 제조하고, (b) 전분의 비분해단말로부터 1, 4-알파-D-글루코시드 결합을 분열시킬 수 있으나 전분의 1, 6-알파-D-글루코시드 결합을 분열시킬 수 없는 엑소효소에 의하여 전분유도체의 70중량% 이하를 맥아당으로 열화하는 단계로 이루어지는 저장중의 오일링 및 겔링에 대한 안정성 및 저항성이 개선된 에멀젼의 유화특성을 가지는 개질전분의 제조방법.
- 제7항에 있어서, 상기 전분은 왁스 메이즈 전분이고, 전분의 비분해단말로부터 1, 4-알파-D-글루코시드 결합을 분열시킬 수 있으나 전분의 1, 6-알파-D-글루코시드 결합을 분열시킬 수 없는 엑소효소에 의하여 처리하기 이전에, 상기 전분은 약 60이하의 WF로 산 또는 열변환되거나, 또는 알파-아밀라제에 의하여 변환되고, 상기 전분은 그 전분건조 중량기준으로 0.25% 이상의 옥테닐숙신산 무수물로 처리하여 유도되는 개질전분의 제조방법.
- 제7항에 있어서, 상기 효소는 베타-아밀라제이고, 건조중량 기준으로 전분의 100g당 당화력 334-1,110의 효소농도, pH 3-10, 20-75℃의 온도로 33% 이하의 고형물을 함유하는 수성분산물내에서 효소열화가 행하여지는 개질전분의 제조방법.
- 제7항에 있어서, 상기 전분유도체는 히드로포브기를 함유하고, 히드로포브기는 탄소원자수 5이상의 알킬, 알케닐, 아릴킬 또는 아랄케닐기로 이루어지는 개질전분의 제조방법.
- 제7항에 있어서, 상기 히드로필기와 히드로포브기 양자를 함유하는 전분유도체는 다음식을 가지는 치환기를 함유하는 개질전분의 제조방법.식중 R은 디메틸렌 및 트리메틸렌기의 클라스로부터의 기이고, R′는 탄소원자수 5이상의 알킬, 알케닐, 아랄킬 또는 아랄케닐기로 이루어지는 히드로포브기이고, 카르복실기 COOH는 히드로필기이다.
