Claims (7)
- 볶은 커피의 가용성 고형분 농도가 12 내지 30중량%인 수용성 추출액을 얻는 단계, 온도 35 내지 80℃, 압력 40 내지 360㎜Hg의 진공 증발기 내에서 상기 추출액을 고형분 농도가 35 내지 55중량%로 되게 농축하는 단계, 진공 증발액을 농축하는 단계, 이 농축 증발액을 400mmHg 이하의 압력에서 진공착취하고 이 착취액을 농축시켜서 농축 증발액의 농도가 5 내지 15중량%인 농축액을 얻는 단계, 농축 착취액을 추출액 고형분 1㎏당 약 0.2 내지 0.60㎏의 양으로 농축 추출액에 첨가하는단계 및 이 혼합물을 건조하는 단계로 이루어진 것이 특징인 가용성 커피 제품의 제조 방법.
