Abstract
1424263 Aromatic products PROCTER & GAMBLE CO 20 Feb 1973 8298/73 Heading A2B A stable concentrated flavourful aromatic product is obtained from a substrate, for example coffee, tea, oranges, strawberries, or peanuts, by slowly introducing wet steam, preferably in the form of hot water, which, in the conditions obtaining in the zone, vaporises, into a zone at a temperature of 0-60‹C containing the substrate such that flooding of the zone is avoided whilst maintaining a pressure therein of 0.1-200mm Hg abs., and collecting an aroma and flavour concentrate portion of the extract, which can be condensed at -20 to -200‹C, prior to breakthrough of liquid from the zone and after the liquid breakthrough collecting two distillate fractions condensing first at -20 to -80‹C and secondly -80 to -200‹C. The zone may be purged with an inert gas prior to and/or during the steam treatment. The condensed material may be mixed with a solution of carbohydrates and/or proteins, which may have been derived from the same material as the substrate, and freeze dried.
