- 수심 200m 이하의 해양 심층수로부터 고등어절임용 소금을 생산하는 단계와 간 고등어를 만드는 단계로 이루어지며, 각 단계는 다음의 각 공정이 순차적으로 이루어지는 간 고등어를 만드는 방법.Ⅰ. 고등어절임용 소금을 생산하는 단계1) 해양 심층수로부터 소금을 생산하는 공정본 발명에서 고등어를 절임 하는 소금은 오염되지 않은 수심 200m 이하의 해양 심층수를 취수하여 보메도 비중이 26∼32°Be 범위로 농축하여 석출(析出)된 소금을 함수와 분리하여 소금을 생산한다.2) 비환원당이 혼합된 소금을 만드는 공정상기의 해양 심층수로부터 소금을 생산하는 공정에서 생산된 소금에 과당류 중에서 환원성이 없는, 라피노오스(Raffinose), 트레할로스(Trehalose), 자당(Sucrose)과 같은 비환원당(非還元糖: Nonreducing sugar) 중에서 단독 또는 2종류 이상 혼합한 것을 1∼8wt% 범위로 혼합하여 비환원당이 혼합된 소금을 만든다.Ⅱ. 간 고등어를 만드는 단계1) 고등어의 전처리공정냉동고등어는 해동하여 냉동하지 않은 고등어와 함께 할복하여 내장과 뼈를 제거한 다음, 함수로 세척하여 하여 핏물과 이물질을 깨끗이 제거하여 습식 염장처리공정으로 보낸다.2) 습식 염장처리공정수심 200m 이하에서 취수된 해양 심층수나 해양 심층수를 이용하여 음료수를 제조하는 경우에는 역삼투 여과공정에서 여과되지 않고 농축된 농축 염수를 혼합조(1)에 공급하여 혼합조 교반기(2)로 교반하면서, 상기의 고등어절임용 소금을 생산하는 단계의 해양 심층수로부터 소금을 생산하는 공정에서 생산된 소금을 보메도 비중이 5∼12°Be 범위로 주입하고, 식물성 폴리페놀화합물의 첨가제를 pH가 5∼6의 범위로 조정하여 해양 심층염수 이송펌프(3)로 습식 염장처리조(4)에 주입한다.혼합조(1)의 해양 심층염수가 습식 염장처리조(4)에 공급되면, 내염성 재질로 된 철망전극(5)에 상기의 고등어의 전처리공정에서 전 처리된 고등어를 충전(充塡)한 것을 습식 염장처리조(4)에 주입하고, 고압정전기발생장치(高壓靜電氣發生裝置: 10)의 변압기(10a)의 2차 권선(4)의 출력 단말(10g)을 철망전극(5)에 연결하고, 인입 전원을 100∼220볼트(Volt), 주파수 50∼60㎐의 교류 전원을 인가(印加)하고, 전압조정기(電壓調整器: 10b)를 조정하여 철망전극(5)에 전압을 3,000∼5,000볼트(Volt), 전류를 10∼150㎂의 정전압을 4∼10시간 동안 인가하여 1차 습식 염장처리가 된 고등어(9)는 습식 염장처리조(4)로부터 인출하여 건조공정으로 보낸다.혼합조(1)의 해양 심층염수가 습식 염장처리조(4)에 공급되면, 철망전극(5)에 상기의 고등어의 전처리공정에서 전 처리된 고등어를 충전(充塡)한 것을 습식 염장처리조(4)에 주입하고, 고압정전기발생장치(高壓靜電氣發生裝置: 10)로부터 고압의 교류 정전압을 철망전극(5)에 3,000∼5,000볼트(Volt)의 전압과 10∼150㎂의 전류를 고등어(9)가 충전된 철망전극(5)에 4∼10시간 동안 인가하여 정전기유도처리를 하여 습식 염장처리가 된 고등어(9)는 습식 염장처리조(4)로부터 인출하여 건조공정으로 보낸다.3) 건조공정상기의 습식 염장처리공정의 습식 염장처리조(4)로부터 인출된 고등어(9)는 물기가 잘 빠지는 망에 널어 1∼2시간 동안 물기가 흘러 내려 자연 중력에 의한 탈수가 되면서 표면이 꾸둑꾸둑할 정도로 건조하여 건식 염장처리공정으로 보낸다.4) 건식 염장처리공정상기의 건조공정에서 건조된 고등어(9)를 고등어절임용 소금을 생산하는 단계의 비환원당이 혼합된 소금을 만드는 공정에서 생산된 비환원당이 혼합된 소금을 고등어(9)의 무게를 기준으로 8∼12wt% 범위로 생선의 아가미와 배에 뿌리고, 몸에도 뿌려서 건식 염장처리를 하여 제품화공정으로 보낸다.5) 제품화공정상기의 건식 염장처리공정에서 염장처리된 고등어(9)를 실온상태에서 함수율이 30∼40wt%로 건조하면서 6∼10시간 동안 숙성한 다음, 자외선살균처리를 한 것을 진공포장하여 0∼5℃ 범위의 냉장실에서 6∼50시간 동안 저온숙성하여 간 고등어를 만든다.
- 청구항 1에 있어서, 상기의 비환원당이 혼합된 소금을 사용하는 대신에, 상기의 해양 심층수 농축공정에서 생산된 소금을 고등어(9)의 무게기준으로 8∼12wt% 범위로 생선의 아가미와 배에 뿌리고, 몸에도 뿌려서 건식 염장처리를 하여 제품화공정으로 보내어 간 고등어를 만드는 방법.
- 청구항 1에 있어서, 상기의 건식 염장처리공정에서 건조된 고등어(9)를 고등어절임용 소금을 생산하는 단계의 비환원당이 혼합된 소금을 만드는 공정에서 생산된 비환원당이 혼합된 소금을 사용하는 대신에, 해양 심층수로부터 소금을 생산하는 공정에서 생산된 소금을 소성(燒成) 한 소금에 라피노오스(Raffinose), 트레할로스(Trehalose), 자당(Sucrose)과 같은 비환원당(非還元糖) 중에서 단독 또는 2종류 이상 혼합한 것을 1∼8wt% 범위로 비환원당이 혼합된 소성 소금을 고등어(9)의 무게기준으로 8∼12wt% 범위로 생선의 아가미와 배에 뿌리고, 몸에도 뿌려서 건식 염장처리를 하여 제품화공정으로 보내어 간 고등어를 만드는 방법.

- 청구항 3에 있어서, 상기의 해양 심층수로부터 소금을 생산하는 공정에서 생산된 소금을 소성 한 소금 대신에, 해양 심층수로부터 소금을 생산하는 공정에서 생산된 소금을 대나무 통이나 도가니(Crucible)에 주입하고, 목초액을 소금이 잠기도록 충전하고, 800∼1,200℃로 가열하는 조작을 1∼3회 실시한 다음, 분쇄하여 소성 된 소금에 라피노오스(Raffinose), 트레할로스(Trehalose), 자당(Sucrose)과 같은 비환원당(非還元糖) 중에서 단독 또는 2종류 이상 혼합한 것을 1∼8wt% 범위로 혼합하여 비환원당이 혼합된 소성 소금을 사용하여 간 고등어를 만드는 방법.
