Abstract

PURPOSE: A method for cultivating bean sprouts containing saponin isolated from ginseng using effective microorganism(EM) is provided, thereby preventing the rot of and improving sprouting rate of bean sprouts. CONSTITUTION: The method for cultivating bean sprouts containing saponin isolated from ginseng using effective microorganism(EM) comprises the steps of: cultivating a microorganism mixture containing 70 to 75% of lactic acid bacteria including Lactobacillus, 15 to 20% of yeast including Saccharomyces and 5 to 10% of other microorganism including Actinomycetes with molasses at 20 to 25 deg.C; adding a ginseng powder and a tangleweed powder into the EM cultivated medium and cultivating them at 20 to 25 deg.C; soaking beans in water at 18 to 20 deg.C for 4 hour; soaking the beans in the EM cultivated medium for 30 minutes; inserting the beans into a vessel; and spraying the EM cultivated medium over the beans in a vessel for 4 minutes every 4 hour over 7 day period.
