Claims (6)
- (1) 마이크로코커스 루테우스(Micrococcus luteus), 에스케리키아 콜리(Escherichia Coli), 바실러스 세레우스(Bacillus cereus) 및 스타필로코커스 아우레우스(Staphylococcus aureus)에 대한 항균 활성과 항산화 활성, 혈전분해 활성 및 항생제 내성이 있고, β-글루코시다제(β-glucosidase)와 프로테아제(protease), 아밀라아제(amylase), 리파아제(lipase) 및 셀룰라제(cellulase)의 세포외 효소 분비능을 지니고, 인돌(indole) 및 페닐피루브산(Phenylpyruvic acid)의 유해물질과 β-글루쿠로니다아제(β-glucuronidase) 및 우레아제(urease)의 유해효소를 생성하지 않는 바실러스 서브틸리스(Bacillus subtilis) SRCM102142 균주(KCCM12624P)를 증자한 콩에 접종한 후 40~42℃에서 18~20시간 동안 발효하여 제조한 청국장을 건조한 후 분쇄하여 청국장 분말을 제조하는 단계;
(2) 칩 재료 총 중량 기준으로, 현미 60~66 중량%, 백미 13~17 중량%, 보리 4~6 중량% 및 귀리 4~6 중량%와 상기 (1)단계의 제조한 청국장 분말 11~13 중량%의 칩 재료를 준비하는 단계;
(3) 상기 (2)단계의 준비한 현미, 백미, 보리 및 귀리를 혼합하여 세척하고 1~3℃에서 20~28시간 동안 숙성시킨 후 분쇄한 곡물 분말에 상기 (2)단계의 준비한 청국장 분말을 혼합하여 칩 재료 분말을 제조하는 단계; 및
(4) 상기 (3)단계의 제조한 칩 재료 분말을 250~280℃에서 6~10초간 팽화시키는 단계를 포함하여 제조하는 것을 특징으로 하는 청국장 칩의 제조방법. - 삭제
