Claims (6)
- (a) 대두를 미네랄 수용액에 침지 후 증숙 가공하는 단계;
(b) 상기 증숙된 대두를 분쇄하여 대두 분말을 제조하는 단계;
(c) 상기 대두 분말에 쌀가루 및 천일염을 첨가하여 혼합물을 제조하는 단계;
(d) 상기 (c)단계의 혼합물에 천연 양념 재료를 혼합하여 혼합물을 제조하는 단계; 및
(e) 상기 (d) 단계의 혼합물을 분쇄하는 단계;
를 포함하는 천연 조미료 제조방법으로서,
상기 (a) 단계의 미네랄 수용액은 상기 미네랄 수용액 100중량% 대비 상기 미네랄이 1~20중량% 포함되고,
상기 (a) 단계의 침지는 12~36시간 동안 수행되고,
상기 (a) 단계의 증숙 가공은 100℃ 이상의 수증기로 10~100분 동안 수행되는 것을 특징으로 하는 천연 조미료 제조방법. - 삭제
