Claims (1)
- 밀가루와 전분분말과 청국장분말과 자색고구마로 반죽하여 즉석에서 압출시켜 익힌 생면과 얇게 썬 돼지고기와 양념으로 세절한 배추, 양파, 대파, 당근과 으깬 마늘을 배합하여 제공되는 식단에 있어서,재료준비(제1공정)에서 생면재료인 밀가루와 분말전분과 분말청국장과 첨가량에 따라 색상을 발현시키는 자색고구마로 생면칭량배합(제2-1공정)하고 첨수와 반죽으로 배합출면(제3-1공정)하여 끓이기(제4-1공정)로 익힌 생면과상기 재료준비에서 야채재료만 잘게 썰어 혼합하는 야채칭량배합(2-2공정)과 상기 재료준비에서 얇게 썬 돼지고기를 으깬 키위와 커피용액과 와인과 생강과 양파즙액과 진간장으로 육류칭량배합(2-3공정)하여 상온에서 1일간 숙성시키는 혼합숙성(제3-2공정)과상기 혼합숙성 후에 볶음용 솥, 또는 프라이팬에서 2 내지 5분간 강한 불로 상기 혼합숙성 된 야채육류재료를 볶기(제4-2공정)에서 야채육류볶음으로 볶은 후 그릇담기(제5공정)에서 상기 익힌 생면을 담고 육수대신 상기 야채육류볶음을 얹어 서빙제공(제6공정)되는 것인 특징인 야채육류볶음을 덧씌운 생면
