Abstract
Description
Claims (19)
- 5'-리보뉴클레오타이드 55% w/w 이상(NaCl 미함유 건조 물질 중량 기준)을 포함하고 추가로 글루타메이트를 포함하는 조성물.
- 제 1 항에 있어서,5'-리보뉴클레오타이드 65% w/w 이상(NaCl 미함유 건조 물질 중량 기준)을 포함하는 조성물.
- 제 1 항 또는 제 2 항에 있어서,글루타메이트 대 5'-리보뉴클레오타이드의 비가 0.001 초과 내지 0.1 미만인, 조성물.
- 제 1 항 또는 제 2 항에 있어서,글루타메이트 0.01 내지 10% w/w(NaCl 건조 물질 중량 기준)를 포함하는 조성물.
- 제 1 항 또는 제 2 항에 있어서,5'-IMP와 5'-AMP의 합계보다 많은 5'-GMP를 포함하는 조성물.
- (i) 미생물 세포를 처리하여 RNA를 포함하는 세포 내용물을 방출시키는 단계;(ii) 방출된 세포 내용물에 존재하는 RNA를 다른 가용성 세포 물질로부터 분리하는 단계; 및(iii) 분리된 RNA를 5'-리보뉴클레오타이드로 전환시키는 단계를 포함하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 6 항에 있어서,미생물 세포를 처리하여 세포 내용물을 방출시키기 전에 미생물 세포의 천연 효소를 불활성화시키는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 6 항 또는 제 7 항에 있어서,세포를 효소적으로, 화학적으로 또는 기계적으로 처리하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 8 항에 있어서,세포를 효소적으로 처리하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 6 항 또는 제 7 항에 있어서,방출된 세포 내용물에 존재하는 RNA를 다른 가용성 세포 물질로부터 분리하기 전에 미생물 세포로부터 유래된 고체 물질을 제거하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 10 항에 있어서,고체 물질을 원심분리 또는 여과로 제거하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 6 항 또는 제 7 항에 있어서,다른 가용성 세포 물질로부터의 RNA의 분리를 한외여과로 수행하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 6 항 또는 제 7 항에 있어서,분리된 RNA를 효소로 5'-리보뉴클레오타이드로 전환시키는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 6 항 또는 제 7 항에 있어서,분자량이 5'-리보뉴클레오타이드보다 높은 화합물을 제거하여 5'-리보뉴클레오타이드를 추가로 정제하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 14 항에 있어서,분자량이 5'-리보뉴클레오타이드보다 높은 화합물의 제거를 한외여과로 수행하는, 5'-리보뉴클레오타이드를 함유하는 조성물의 제조 방법.
- 제 1 항에 따른 조성물 또는 제 6 항에 따른 방법에 의해 제조된 5'-리보뉴클레오타이드를 함유하는 조성물을 식품 또는 사료에 첨가함으로써 식품 또는 사료의 맛, 향 및 구강감촉(mouthfeel)으로부터 선택된 1종 이상의 성질을 개선시키거나 향상시키는 방법.
- 제 1 항에 따른 조성물 또는 제 6 항에 따른 방법에 의해 제조된 5'-리보뉴클레오타이드를 함유하는 조성물을 지방 함량이 감소된 식품에 첨가함으로써, 지방 함량이 감소된 식품의 맛, 향 및 구강감촉으로부터 선택된 1종 이상의 성질에서 지방 노트(note)를 개선시키는 방법.
- 제 1 항에 따른 조성물 또는 제 6 항에 따른 방법에 의해 제조된 5'-리보뉴클레오타이드를 함유하는 조성물을 식품에 첨가함으로써, 식품에서 인공 감미제의 뒷맛을 차폐하는 방법.
- 제 1 항에 따른 조성물 또는 제 6 항에 따른 방법에 의해 제조된 5'-리보뉴클레오타이드를 함유하는 조성물을 음료에 첨가함으로써, 음료의 맛, 향 및 구강감촉으로부터 선택된 1종 이상의 성질에서 특정한 야채 노트, 과일맛 노트 및 알콜성 노트로부터 선택된 1종 이상의 노트를 개선시키는 방법.
