- 반원통형, 다각통형, 원뿔형 및 다각뿔형의 성형틀 중의 선택된 하나에 식용재료가 담긴 진공포장백 또는 파우치를 투입하는 제 1단계와, 상기 진공포장백 또는 파우치 내부의 공기를 배출시키면서 가압하여 진공포장 가공체가 성형틀의 형상으로 성형되도록 하는 제 2단계를 가지는 진공포장단계와,상기 성형틀에 의해 소정의 형상으로 진공포장 된 가공체를 진공포장용 초고압 처리기의 챔버의 주입구를 통하여 적층하는 식용재료 적층단계와,상기 챔버의 주입구를 승강수단에 의해 승강되는 커버부재를 이용하여 밀폐하고 압축매체공급수단에 의해 밀폐된 챔버에 압축매체를 공급하여 가공체를 초고압 처리하는 초고압처리단계를 구비하여 된 것을 특징으로 하는 식용재료의 초고압처리 방법.
