Claims (8)
- 인삼의 쓴맛을 마스킹하는 방법으로서,인삼 추출물에 γ-사이클로덱스트린을 첨가하는 단계; 및상기 제조된 혼합물을 40 내지 90℃에서 2,000 내지 5,000rpm으로 10 내지 50분간 교반시키는 단계를 포함하는 것을 특징으로 하는 인삼의 쓴맛을 마스킹하는 방법.
- 제1항에 있어서,상기 인삼 추출물은 고형분 함량이 60% 이상인 인삼 농축액인 것을 특징으로 하는 인삼의 쓴맛을 마스킹하는 방법.
- 제1항에 있어서,상기 인삼 추출물의 중량이 100일 때 상기 γ-사이클로덱스트린이 3 내지 20중량부인 것을 특징으로 하는 인삼의 쓴맛을 마스킹하는 방법.
- 제1항에 있어서,상기 인삼 추출물은 고형분 함량이 15 내지 30%인 인삼 농축액이고, 상기 교반하는 단계 이후에 상기 인삼 농축액과 γ-사이클로덱스트린의 혼합물을 분말화하는 단계를 더 포함하는 것을 특징으로 하는 인삼의 쓴맛을 마스킹하는 방법.
- 제4항에 있어서,상기 인삼 농축액의 중량이 100일 때 상기 γ-사이클로덱스트린이 1 내지 5 중량부인 것을 특징으로 하는 인삼의 쓴맛을 마스킹하는 방법.
- 제1항 내지 제5항 중 어느 한 항에 있어서,상기 인삼은 홍삼인 것을 특징으로 하는 인삼의 쓴맛을 마스킹하는 방법.
