CONSTITUTION:A strain X-68 (FERM BP-1426), having double requirements for isoleucine/valine and derived from Torulopsis.glabrata TR-2026 (FERM BP-1425) is cultivated in a culture medium containing a carbon source, nitrogen source, inorganic salts, vitamins, etc., at pH3-7 and 22-32 deg.C to provide a culture fluid. The aimed pyruvic acid is obtained from the resultant culture fluid by a method for extracting with acidic ether, forming a phenylhydrazone, precipitating and isolating the formed phenylhydrazone, etc.
