Abstract

PURPOSE: To prepare a spongy cake having remarkably excellent softness, resilience, appearance, taste and flavor, by using an edible oil or fat in the form of O/W dispersion as a raw material of the pastry.
CONSTITUTION: In the preparation of a spongy cake by conventional means, an edible oil or fat is used as the raw material of the pastry in the form of an O/ W dispersion, e.g. a dispersion of a large amount of (25W90wt%) oil or fat as fine droplets in water, pref. fresh cream, compound cream, etc. The pastry prepared from the raw material is poured into a silicone-coated cake mold, baked and ripened.
